Day 5: Chicken Broccoli & Cheese Stuffed Shells (Under 30 Minutes!)

Hello dolls! I've been having a rough few days lately with my sickness and what-not, so I haven't had a very easy time to get around to posting anything in my 14 days! (I'm working on it though!) As you all already may know, (if you don't then you can read all about it here) I can't stand longer than 30 minutes at a time, so if I am going to cook it has to be quick and tasty. Today, I decided to try something new! Instead of making a plain old broccoli and cheese casserole- I made chicken broccoli and cheese stuffed shells! BOY THEY WERE YUMMY! So, here's my quick little cooking post! Enjoy! (And enjoy my mom's kitchen! LOL) Ingredients Needed: 3 cups boiling water 2 tbsp olive oil 1 tsp salt 2 cans cream of mushroom 1 cup shredded cheddar cheese 1 cup broccoli 4 boneless chicken breast strips (2 breasts sliced) Step 1: Bring water to a boil. Add large shells. Step 2: Boil 7 minutes (til 1/2 firm 1/2 soft.) Step 3: While shells are boiling, place broccoli in a strainer and steam until bright green and crisp. Step 4: Start cooking chicken in a greased skillet. Cook until chicken is no longer pink. Step 5: Preheat oven to 350 degrees. Step 6: Mix 1 can of cream of mushroom with cheese. Step 7: Remove noodles and broccoli. Strain. Step 8: Chop broccoli into tiny pieces. Add broccoli to cream of mushroom and cheese mixture. Step 10: Remove chicken from heat. Step 11: Cut chicken into small bite size pieces. Then begin stripping them apart with your fingers. Step 11: Mix broccoli, second can of cream of mushroom, and cheese together. Step 12: Begin stuffing your noodles! This can be kind of difficult, so I cut mine open and rolled them up like burritos, and held them together with toothpicks. I know that this method probably is the crappiest one but it worked for me! And Josh thought they were the BOMB. Step 13: Bake for 10 minutes. Step 14: (optional) Top with shredded cheese (we didn't have enough to) Step 15: Enjoy!
