I mentioned last week that this whole having kids in two different schools with two different drop off/pick up times and everything else has been quite challenging. I have had to reorganize my schedule, rethink meal planning, and our lives were turned upside down. Luckily, things are settling down a bit.
And fortunately, Glad Products Company sent me a box full of their Glad Food Storage Products to try out. Ethan has a quick lunch at school, and I am trying to make sure to send him a healthy, fun lunch that he can eat quickly. I don’t want to just send good old peanut butter and jelly everyday, so I have been trying some new recipes, like this one:
Layered Hummus Dip
2 tablespoons extra virgin olive oil 8 ounces tabbouleh 1/8 teaspoon cumin 1/2 cup chopped cucumber 1/2 cup chopped tomato 2 teaspoons fresh lemon juice 1/2 teaspoon garlic salt fresh ground pepper 2 tablespoons chopped kalamata olives 1/4 cup chopped parsley 1 container (about 17 ounces) prepared hummus 6 ounces crumbled feta cheese
Place tabbouleh in a medium sized mixing bowl. Bring 1-1/4 cups water to a rolling boil. Pour over the tabbouleh, and cover with plastic wrap for 5 minutes. Uncover, stir, and add oil, cumin, cucumber, tomato, lemon juice, garlic salt, pepper and parsley. Gently mix with a fork to incorporate all ingredients.
Spread the hummus in the bottom of a 13×9 dish. Sprinkle half the feta cheese over the hummus. Next spread the tabbouleh mixture and then top with the remaining feta cheese.
Yummy, right? Ethan loves this and I can easily put some in one of the Glad small snack containers. Ethan loves to eat this with baked pita chips and veggies, which go into another snack container. What is great about this recipe is that you can add or remove any ingredients you like – try it using your family’s favorite veggies!
There are so many reasons I love these Glad food storage products. First of all, they eliminate the need for plastic baggies or containers that have to be thrown away. This makes my green heart happy. But sometimes kids forget, and if Ethan accidentally throws away the container, they are affordable enough to buy more.
I also like that I’m storing food in the freezer, I can write what it is with the date right on the lid. I can also write Ethan’s name on them so he knows that they belong to him. I have even decorated them with little words and hearts and other designs I know Ethan likes. He looks forward to the surprise of finding out what I have drawn just for him.
Another thing I love about these containers is that they can be used to store so much more than food. I store the girls’ hair clips in them, crayons, buttons, puzzle pieces, on the go snacks, I even put wet wipes in them and keep them in the car for those just-in-case times we might need them.
