Food for the Soul... How to Make Gumbo

Ok dolls, I'm coming to you with my first recipe. Some of you may know that I loooove to cook and bake. I'm always offended when people say "you don't look like you can cook" I always wonder what someone who can cook looks like. Well, I taught myself how to make gumbo about a month ago after years of wondering and being scared to try. My step father made the best gumbo in the world and when he passed away I haven't had any as good since. One Sunday after craving it, I just decided to give it a try. My family and friends loved it and some of them said it was the best they had ever had. My hubby was in the mood for more and since I was making it, I thought I would share with dolls. Gumbo is one of my all time favorite meals and though some people say it's too hot for it, I could care less, I will eat it anytime of the year. Now there is one short cut that I take, I don't have time to make rue from scratch.... I know how but I found that there is a quicker and easier way. Here is what you will need: Ingredients: 1 pound of shrimp 1pound of crab legs 1/2 of craw fish 1 pack of Conecuh smoked sausage (the se are the best smoked sausage ever) 1 can of chicken broth 1 carton of chicken stock 2 cups of water 1 teaspoon of garlic 3 stalks of celery 1small bell pepper 1 small onion 1tablespoon of parsley green onion 1 bag of Louisiana Cajun Gumbo Mix Seasonings: Garlic Powder Creole Seasoning Cajun Seasoning Pepper Seasoned Salt If you don't have a chopper, I suggest getting one. I paid around $15.00 for this one at Dollar General. It chops all of your veggies in a matter of seconds. You also need a good stock pot. First step is to chop everything. Note: there was way more but for pic purposes I showed you guys a small portion. Next make your rue, follow the directions on the back of the package. It requires 2 quarts of chicken stock or water, but I mix water, chicken broth and chicken stock. I think it gives it a better flavor. This is what it will look like Next add veggies and sausage. The sausage take a while to cook so adding them early is essential Add your first round of seasonings. I usually do it 3 times Go heavy on the seasoning to get a good flavor. Let cook for about 10 min Add shrimp, craw fish, crab legs and more seasonings Let simmer for 15 minutes and season in between Cook your rice while gumbo simmers Yum..... enjoy.
