The old saying is true. If you’re constantly opening your smoker and checking your meat – you aren’t allowing your BBQ to cook properly.
This is why I suggest investing in a digital probe thermometer. You can probe your meat and get a constant read on the internal temps at all time during the smoking process – without ever opening your smoker.
These probe thermometers aren’t expensive. You can buy one online for around $20… and it’s worth every penny.
This one, little gadget will make your life a little easier. Plus, your meat will cook faster because you won’t have to constantly open your smoker to check internal temps.
And I can’t stress this enough… when you open your smoker, your temp is going to make a pretty drastic drop. And this drop can cause your meat to seize up – resulting in tough BBQ. And that’s NOT what you want.
But the best benefit of using a probe thermometer is that it gives you peace of mind. You will know the minute you hit that internal temp you are aiming for.
When you probe your raw meat right before putting it on the smoker, put it in the thickest part. But make sure you don’t have that probe anywhere close to the bone because it will give you a much higher temp than it really is.
We leave our probe thermometers in all the way through the cooking process and even when we put it in a dry cooler to rest. It just allows us to continue to monitor the meat internals at all times.
No need to constantly check temps and every chance for your BBQ to cook without any drop in smoker temp. BBQ technology is great isn’t it?
