This masala khichdi with lots of vegetables makes a great dish and a good weekend meal. You can use any vegetable of your choice. This is a healthy choice even for kids.
Ingredients:
Raw rice - 1 1/2 cups Whole Moong dal - 1 cup Onion - 2 vegetables (carrot, beans, potato, cauliflower, peas) - 1 cup Tomato - 1 Ginger & Garlic paste - 1 tbsp Water - 5 cups To temper: Oil - 3 tbsp Cloves - 2 Cinnamon sticks - small stick Bay leaf - 1 Cardamon - 2 Method: In a skillet, fry whole moong dal for 5 minutes in a medium flame. Soak with rice for 15 to 30 minutes and drain the water with the help of a strainer. In a pan, heat oil add all the ingredients given to temper. Put green chilly, onion, ginger & garlic paste stir for 2 minutes. Add all the vegetables one by one. put turmeric powder. Cook on a medium flame for 5 to 8 minutes. Stir in the rice and whole moong dal for 2 to 3 minutes. Add water and transfer to a pressure cooker and cook for 15 mins or till soft. Serve with papad or plain curd.
